Ingredients
- ⅔ cup whole wheat breadcrumbs
- ½ cup freshly grated Parmesan cheese (or rice or soy
cheese) - ¼ teaspoon dried oregano
- ¼ cup dried parsley flakes
- 4 tablespoons freshly ground black pepper
- 4 tablespoons minced lemon zest
- 4 4 oz skinless and boneless chicken breast
Instructions
- Preheat oven to 450°F. Coat a baking pan with nonstick cooking spray.
- In a mixing bowl, combine the breadcrumbs, cheese, oregano, parsley, and black pepper.
- Coat both sides of chicken breasts with the breadcrumb mixture and place in the prepared pan. Sprinkle each breast with 1 tablespoon lemon zest and bake for 22 to 28 minutes, or until lightly browned and cooked through.
