Easy Lemon-Crusted Chicken

Ingredients

  • cup whole wheat breadcrumbs
  • ½ cup freshly grated Parmesan cheese (or rice or soy
    cheese)
  • ¼ teaspoon dried oregano
  • ¼ cup dried parsley flakes
  • 4 tablespoons freshly ground black pepper
  • 4 tablespoons minced lemon zest
  • 4 4 oz skinless and boneless chicken breast

Instructions

  • Preheat oven to 450°F. Coat a baking pan with nonstick cooking spray.
  • In a mixing bowl, combine the breadcrumbs, cheese, oregano, parsley, and black pepper.
  • Coat both sides of chicken breasts with the breadcrumb mixture and place in the prepared pan. Sprinkle each breast with 1 tablespoon lemon zest and bake for 22 to 28 minutes, or until lightly browned and cooked through.
